Chhana whey is a nutritious by product of dairy industry and its usage for formulation beverages will facilitate economic utilisation prevent environmental pollution. Amla or Aonla the richest source vitamin C with many health benefits. In present study juice was used to enrich content enhance nutritional value chhana whey. drink prepared blending amla at 5, 10 15 per cent Sugar added cent. Based on sensory evaluation physico- chemical characteristics like pH, acidity, ascorbic acid, total soluble solids, viscosity best level selected. The effect different heat treatments 63°C/ 30 min, 72°C/1 80°C/5 min stability also analysed. beverage from blend had highest overall acceptability scores (8.27). There 5 times increase in acid when treatment temperature 72°C /1min found be as it retained more acid.
